Blueberry and Spelt flour muffin

Great news! – our Farmers Mill farmers have been busy growing Spelt. It’s believed that spelt flour was first used almost 8,000 years ago, making it one of the oldest cultivated crops in human history. Spelt flour is a grain or cereal that’s closely related to wheat. Spelt is a good source of dietary fibre, protein, and vitamins and minerals. This grain is also more water-soluble than wheat, which makes it easier for the body to digest. Due to the many minerals and vitamins spelt contains, it can help regulate metabolism, increase circulation, improve the immune system, lower blood sugar, and reduce bad cholesterol levels.

Ingredients

460g Farmers Mill Spelt Flour
140g Farmers Mill Mitre Wholemeal Flour
5g Baking Powder
2.5g Baking soda
3g Salt
450g Apple sauce
230g Honey
150g Oil
200ml Egg
5ml Vanilla Essence
5g Cinnamon
300g Blueberries (Fresh or Frozen)

Method

  1. Sift flour, baking powder and salt into a bowl
  2. Melt the honey, combine with the oil and apple sauce.
  3. Add these with the egg to the dry ingredients.
  4. Combine base ingredients until mixed thoroughly.
  5. Add blueberries and gently mix through.
    Spoon into muffin tins with paper cups: Bake at 180-200°C for 15-18 mins.
