Apple Cider Crullers

These apple cider crullers are the perfect treat! They have a light and airy inside, a crispy outside, and a hint of apple cider flavour. Each donut is coated in an apple cider glaze for an extra kick of flavour.

Ingredients

Dough

500gFarmers Mill Summit Flour
440gButter
500mlMilk
100gSugar
600gEggs
10mlVanilla Extract

Glaze

900gIcing Sugar
10gCinnamon
300mlApple Cider
10mlVanilla Extract

Oil for frying

1.5 LThis recipe will make approximately 24 crullers

Method

  1. Pour the frying oil into a large thick based pot and heat to 180 degrees Celsius
  2. In a medium sized pot on medium heat combine butter, apple cider, milk and sugar stirring all the time until steam starts rising from the mixture. Do not boil.
  3. Quickly mix in the flour with a wooden spoon and keep it on the heat, keep stirring the dough until it starts to stick to the bottom of the pot (this should take about 5mins).
  4. Remove the dough from the heat and keep stirring until the mixture is cool to touch.
  5. Slowly mix in the eggs and Vanilla extract once again this should take about 5 mins or until all the ingredients are combined, spoon the mixture into a piping bag with a star nozzle. And place to one side.
  6. In a dish add the ingredients for the glaze and whisk them together so there are no lumps and is ready for dipping the crullers into.
  7. Cut some baking paper into 10cm squares and pipe the cruller mixture onto the paper in a circle.
  8. Once the oil is up to temperature place the cruller mixture on the paper into the oil (paper side up).
  9. Remove the paper from the oil with tongs and fry the cruller until golden brown on both sides.
  10. Remove the cruller from the oil, allow to cool briefly then dip into the glaze and place on a drip tray to cool.
  11. Once cooled they are ready to eat, a very tasty treat. This recipe will make approximately 24 Crullers.
